To unlock weapons with infinite ammo, do the following to get a particular weapon:

Start with All Handguns and Shotgun: Beat the game with an A Rank on Easy

Start with all weapons and unlimited ammo: Beat the game with an S Rank on Hard difficulty

Start with all weapons except charged particle rifle: Beat the game with an A Rank on Normal difficulty or an S Rank on Easy difficulty

Start with all weapons with unlimited ammo except charged particle rifle: Beat the game with an A Rank on Hard difficulty or an S Rank on Normal difficulty.

To view an alternate title screen: Simply beat the game.

Play as Fongling for the majority of the game: Beat the game on any difficulty.  Save your post-game file and open it.  When prompted to, select YES to be able to play as Fongling for a majority of the game.  The gameplay doesn't change; it plays as if you're playing as Bruce.
